Smoked salmon, dill and cucumber open sandwiches

This is such a simple, fresh tasting lunch - very healthy, but every mouthful shouts 'luxury', not 'diet'.

 

As with all the best simple lunches, it's almost insulting to give you a recipe, but here goes.

 

For two:

Four slices good, dense brown or wholemeal bread, buttered

A 100g ish pack of smoked salmon

Half a cucumber

Half a pack of dill

Salt

Half an hour to an hour before you want to eat, slice the cucumber and sprinkle lightly with salt to draw out some of the water.

Just before eating, arrange cucumber on bread, lay salmon on top, and snip over dill.

Eat rapidly.

As I said, insultingly easy!
